12 oz spaghetti

1 tablespoon olive oil

3 cloves garlic, minced

1 small onion, diced

1 bell pepper, diced (any color)

1 zucchini, sliced

1 can (14.5 oz) diced tomatoes, with juices

4 cups vegetable broth

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving

Instructions
 

Prep the Vegetables: Start by washing and chopping your vegetables. Dice the onion and bell pepper, and slice the zucchini.

    Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add the minced garlic and diced onions. Sauté for about 2 minutes, until the onions become translucent and fragrant.

      Add Veggies: Stir in the diced bell pepper and zucchini. Cook for another 3-4 minutes until they begin to soften.

        Combine Ingredients: Add the uncooked spaghetti, canned diced tomatoes (with their juices), vegetable broth, Italian seasoning, and red pepper flakes (if using) into the pot. Stir everything to combine well.

          Cook: Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and cook for about 10-12 minutes, stirring occasionally, until the spaghetti is tender and has absorbed most of the liquid.

            Season: Once cooked, taste and adjust the seasoning with salt and pepper as needed. If you prefer a creamier consistency, you can stir in a splash of heavy cream (optional).

              Garnish and Serve: Remove from heat, and let the dish sit for a few minutes. Serve hot, garnished with fresh basil leaves and a sprinkle of grated Parmesan cheese.
