1.5 lbs flank steak, thinly sliced against the grain

4 cups broccoli florets (fresh or frozen)

½ cup beef broth

½ cup soy sauce (low sodium recommended)

¼ cup brown sugar

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon cornstarch

2 tablespoons water

2 tablespoons sesame oil

Cooked rice, for serving

Sesame seeds and sliced green onions, for garnish (optional)

Instructions
 

Prep the Beef: Thinly slice the flank steak against the grain. This will ensure the meat is tender after cooking.

    Mix the Sauce: In a medium bowl, combine the beef broth, soy sauce, brown sugar, minced garlic, and grated ginger. Whisk well to combine and dissolve the sugar.

      Layer in the Slow Cooker: Place the sliced beef in the bottom of the slow cooker. Pour the sauce mixture over the beef, making sure all the slices are coated.

        Cooking Time: Cover the slow cooker and set to low for 4 to 5 hours or high for 2 to 3 hours, or until the beef is tender.

          Add Broccoli: About 30 minutes before serving, add the broccoli florets to the slow cooker. If the broccoli is fresh, it will cook perfectly in the remaining time. If using frozen broccoli, it can go in earlier.

            Thicken the Sauce: In a small bowl, mix cornstarch and water until smooth. Stir this into the slow cooker 15 minutes before serving to thicken the sauce.

              Finishing Touches: Once the cooking time is up, drizzle the sesame oil over the beef and broccoli. Gently stir to combine.

                Serve: Serve your beef and broccoli hot over steamed rice. Garnish with sesame seeds and sliced green onions if desired.
