Ingredients

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (adjust to taste)

2 cups cooked, shredded chicken (rotisserie chicken works great)

2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed

4 cups low-sodium chicken broth

1 can (4 oz) diced green chiles

1 cup corn (fresh, frozen, or canned)

Salt and pepper to taste

1/2 cup sour cream or Greek yogurt

1 cup shredded Monterey Jack cheese

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Sauté the Base: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes. Stir in the minced garlic and sauté for an additional minute until fragrant.

Add Spices: Sprinkle in the ground cumin, chili powder, smoked paprika, and cayenne pepper. Cook for another minute, allowing the spices to toast slightly and release their aromas.

Combine Ingredients: Add the shredded chicken, white beans, chicken broth, diced green chiles, and corn into the pot. Stir everything together well.

Simmer: Bring the mixture to a gentle boil, then reduce the heat to low. Allow it to simmer uncovered for about 20-25 minutes, stirring occasionally to help the flavors meld.

Finish with Creaminess: Stir in the sour cream (or Greek yogurt) and shredded Monterey Jack cheese until fully melted and combined. Season with salt and pepper to taste.

Serve: Ladle the chili into bowls and garnish with chopped cilantro and a squeeze of lime juice for added brightness. Enjoy!
