EASY STUFFED BELL PEPPERS

4 large bell peppers (any color)

1 cup quinoa or rice (cooked)

1 cup black beans (canned, drained, and rinsed)

1 cup corn (frozen or canned)

1 cup diced tomatoes (canned)

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon salt

½ teaspoon black pepper

1 cup shredded cheese (cheddar or pepper jack)

Fresh cilantro (for garnish)

Lime wedges (for serving)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Peppers: Wash the bell peppers, cut the tops off, and remove the seeds and membranes. Place them upright in a baking dish.

      Mix Filling: In a large mixing bowl, combine the cooked quinoa or rice, black beans, corn, diced tomatoes, cumin, smoked paprika, garlic powder, salt, and black pepper. Stir until well combined.

        Stuff Peppers: Generously fill each bell pepper with the quinoa mixture, packing it in tightly. Place a sprinkle of cheese on top of each stuffed pepper, reserving some for later.

          Bake: Pour a small amount of water into the bottom of the baking dish to help steam the peppers, then cover with foil. Bake in the preheated oven for 25 minutes.

            Add Cheese: After 25 minutes, remove the foil, sprinkle the remaining cheese on top of the peppers, and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.

              Garnish & Serve: Remove from the oven, let cool slightly, and garnish with fresh cilantro. Serve with lime wedges for an extra burst of flavor.
