1 lb (450g) chicken breast, diced into bite-sized pieces

1 cup jasmine rice

2 cups water (for cooking rice)

1/2 cup soy sauce (low sodium preferred)

1/4 cup brown sugar

1/4 cup mirin (or rice vinegar)

2 tablespoons cornstarch mixed with 2 tablespoons water (for thickening)

2 tablespoons vegetable oil

2 cloves garlic, minced

1 teaspoon fresh ginger, minced

1 tablespoon sesame seeds (for garnish)

2 green onions, sliced (for garnish)

Salt and pepper to taste

Instructions
 

Cook the Rice: In a medium saucepan, combine jasmine rice and 2 cups of water. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover with a lid, and simmer for about 15 minutes or until the water is absorbed. Fluff with a fork and set aside.

    Prepare the Teriyaki Sauce: In a small bowl, whisk together the soy sauce, brown sugar, and mirin until the sugar dissolves. Set aside.

      Cook the Chicken: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the diced chicken and season with salt and pepper. Sauté for about 5-7 minutes, or until the chicken is cooked through and lightly browned.

        Add Aromatics: Add the minced garlic and ginger to the skillet with the chicken. Sauté for an additional 1-2 minutes until fragrant.

          Combine with Sauce: Pour the teriyaki sauce over the cooked chicken in the skillet. Stir to ensure all the chicken is coated.

            Thicken the Sauce: Stir in the cornstarch mixture and cook for another 2-3 minutes until the sauce thickens and becomes glossy. Adjust seasoning if necessary.
