4 boneless, skinless chicken breasts

1 cup cherry tomatoes, halved

1 cup fresh basil leaves, chopped

1 cup mozzarella cheese, shredded

3 cloves garlic, minced

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional)

Toothpicks or kitchen twine for securing

Preheat the oven to 375°F (190°C).

    Prepare the filling: In a medium bowl, combine the halved cherry tomatoes, chopped basil, shredded mozzarella, minced garlic, olive oil, salt, pepper, Italian seasoning, and red pepper flakes. Mix well until all ingredients are incorporated.

      Prepare the chicken: Carefully slice a pocket into each chicken breast. Make a horizontal cut along the side, ensuring you don't cut all the way through. Season the outside of the chicken breasts with salt and pepper.

        Stuff the chicken: Generously fill each chicken pocket with the tomato and basil mixture. Secure the opening with toothpicks or tie with kitchen twine to keep the filling intact.

          Sear the chicken: In a large oven-safe skillet, heat a little olive oil over medium-high heat. Once hot, add the stuffed chicken breasts and sear for 3-4 minutes on each side until golden brown.

            Bake: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C).

              Rest and serve: Remove the chicken from the oven and let it rest for 5 minutes. Carefully remove the toothpicks or twine, slice if desired, and serve warm. Enjoy with a side salad or over a bed of rice!
