1 lb ground beef (or turkey for a leaner option)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 packet taco seasoning

1 cup corn kernels (fresh, canned, or frozen)

1 cup cooked rice (white or brown)

1 cup shredded cheddar cheese

1 cup sour cream

1 cup salsa

1 cup crushed tortilla chips

1/4 cup sliced green onions (for garnish)

Fresh cilantro (for garnish, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Meat: In a large skillet over medium heat, cook the ground beef (or turkey) until browned. Drain any excess fat.

      Add Ingredients: Stir in the black beans, diced tomatoes (with juices), taco seasoning, corn, and cooked rice. Let simmer for about 5 minutes for the flavors to blend.

        Layer the Casserole: In a greased 9x13 inch baking dish, spread half of the meat mixture evenly across the bottom. Top with half of the salsa, then add half of the sour cream, spreading it gently. Sprinkle half of the shredded cheddar cheese on top.

          Repeat Layers: Add the remaining meat mixture over the first layered ingredients, followed by the remaining salsa and sour cream. Finish with the last layer of shredded cheddar cheese.

            Add Crunch: Scatter crushed tortilla chips over the top for an extra crunch.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the casserole is bubbly and the cheese is golden.

                Garnish and Serve: Remove from the oven and let it cool for a few minutes. Before serving, sprinkle with sliced green onions and fresh cilantro if desired.
