2 whole English muffins, split in half

4 large eggs

1/2 cup shredded mozzarella cheese

1/2 cup diced tomatoes

1/4 cup diced bell peppers (red or green for color)

1/4 cup cooked and crumbled breakfast sausage (optional)

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

Fresh basil or parsley for garnish (optional)

Olive oil for drizzling

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Muffins: Place the split English muffins on a baking sheet, cut side facing up. Drizzle a little olive oil over each half for added flavor and crunch.

      Sauté the Vegetables: In a small skillet over medium heat, sauté the diced bell peppers and core tomatoes until they soften (about 3-4 minutes). Season with garlic powder, onion powder, salt, and pepper. Set aside.

        Cook the Eggs: In a mixing bowl, whisk the eggs together until well combined. You can scramble them or cook them sunny-side up—whichever you prefer. If scrambling, cook them in the same skillet until just set.

          Assemble the Pizza: On each muffin half, start by layering a generous amount of sautéed vegetables, followed by a sprinkle of crumbled breakfast sausage (if using), and then pour or place the scrambled or cooked eggs on top.

            Add Cheese: Top each muffin with a generous handful of shredded mozzarella cheese.
