Ingredients

2 cups all-purpose flour

1 ½ cups granulated sugar

¾ cup unsweetened cocoa powder

1 ½ teaspoons baking powder

1 ½ teaspoons baking soda

1 teaspoon salt

2 large eggs

1 cup buttermilk

½ cup vegetable oil

2 teaspoons vanilla extract

1 cup boiling water

15 Oreo cookies, crushed (for the batter)

1 ½ cups heavy cream

1 cup powdered sugar

1 teaspoon vanilla extract (for the frosting)

20 whole Oreos (for decoration)

Chocolate ganache (optional for drizzling)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans and set aside.

Mix Dry Ingredients: In a large mixing bowl, sift together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt until combined.

Combine Wet Ingredients: In another bowl, whisk together the eggs, buttermilk, vegetable oil, and vanilla extract until smooth.

Combine Mixtures: Gradually add the wet mixture to the dry ingredients, mixing on medium speed until combined. Then, slowly add the boiling water, mixing until the batter is smooth. Stir in the crushed Oreos until evenly distributed.

Bake: Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Cool the cakes in the pans for 10 minutes before transferring them to wire racks to cool completely.

Make Frosting: While the cakes cool, prepare the frosting. In a large mixing bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.

Assemble the Cake: Once the cakes are completely cooled, place one layer on a serving platter. Spread a generous layer of whipped cream frosting over the top. Place the second cake layer on top, pressing down gently.

Frost the Outside: Use the remaining whipped cream frosting to cover the top and sides of the cake. Smooth out the frosting with a spatula for a clean finish.

Decorate: Press whole Oreos around the sides of the cake and place a few on top. For an extra indulgent touch, drizzle chocolate ganache over the top.

Serve: Slice and serve the Extreme Oreo Cake chilled for that perfect creamy treat!
