Ingredients

1 cup fresh or frozen raspberries

1 cup almond flour

1/2 cup maple syrup

1/4 cup coconut oil, melted

1/2 teaspoon vanilla extract

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal later.

Prepare the Raspberry Filling: In a small saucepan over medium heat, combine the raspberries and half of the maple syrup. Cook for about 5 minutes, stirring gently until the raspberries break down and form a thick sauce. Set aside to cool slightly.

Make the Crust: In a mixing bowl, combine the almond flour, melted coconut oil, remaining maple syrup, and vanilla extract. Mix until it forms a crumbly dough.

Assemble the Bars: Press half of the dough mixture firmly into the bottom of the prepared baking pan to create an even crust layer. Pour the raspberry filling over the crust, spreading it evenly. Crumble the remaining dough on top of the raspberries to create a topping.

Bake: Place the pan in the oven and bake for 25-30 minutes, or until the top is golden brown and the filling is bubbling at the edges.

Cool and Slice: Remove from the oven and let the bars cool in the pan for about 10 minutes before transferring to a wire rack. Once completely cool, slice into squares.

Serve: Enjoy these delightful raspberry bars warm or chilled, possibly with a dusting of powdered sugar if desired!
