1 pound ground chicken

1 medium onion, diced

1 red bell pepper, diced

2 tablespoons chili powder

1 teaspoon cumin

½ teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper, to taste

1 cup chicken broth

1 cup shredded sharp cheddar cheese

¼ cup fresh cilantro, chopped (for garnish)

2 tablespoons olive oil

Instructions
 

Cook the Macaroni: In a large pot, bring water to a boil and cook the elbow macaroni according to package instructions. Drain and set aside.
