4 cups of diced potatoes (or frozen hash browns)

1 cup cooked and crumbled breakfast sausage (or bacon)

1 cup chopped bell peppers (red, green, or yellow)

1 cup diced onion

1 cup shredded sharp cheddar cheese

6 large eggs

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh parsley or chives, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Baking Dish: Grease a 9x13 inch baking dish with cooking spray or a little olive oil.

      Layer the Ingredients: In the prepared baking dish, spread the diced potatoes evenly over the bottom. If using frozen hash browns, ensure they are spread out and slightly thawed. Next, layer the cooked sausage/bacon, followed by the chopped bell peppers and diced onion.
