Fire-Roasted Corn Salsa

Ingredients
  

4 ears of fresh corn, husked

1 red bell pepper, finely diced

1/2 red onion, finely chopped

1 jalapeño, seeds removed and minced (adjust for spice level)

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 teaspoon smoked paprika

Salt and black pepper, to taste

1 tablespoon olive oil

Optional: 1 avocado, diced

Instructions
 

Fire Up the Grill: Preheat your grill to medium-high heat. If using a charcoal grill, let the embers glow until they are even and hot.

    Roast the Corn: Place the husked corn directly on the grill grates. Grill for about 10-15 minutes, turning occasionally until the kernels are golden and charred. Remove from heat and let cool slightly.

      Prep the Veggies: While the corn is grilling, prepare the other ingredients. Dice the red bell pepper and onion, finely chop the jalapeño, and mix them together in a large mixing bowl.

        Cut the Corn: Once the corn is cool enough to handle, carefully cut the kernels off the cob with a sharp knife and add them to the mixing bowl with the other veggies.

          Combine Flavors: Add the chopped cilantro, lime juice, smoked paprika, and olive oil to the corn and vegetable mixture. Season with salt and black pepper to taste. If using avocado, gently fold it in at this stage to avoid mashing.

            Chill and Serve: Let the salsa sit for at least 15-20 minutes at room temperature for the flavors to meld. Serve it immediately with tortilla chips, or as a topping for grilled chicken or fish. Enjoy!
