Ingredients

1 lb large shrimp, peeled and deveined

1 cup buttermilk

1 tsp hot sauce (adjust to your spice preference)

1 cup all-purpose flour

1 cup panko breadcrumbs

1 tsp paprika

1 tsp garlic powder

1 tsp onion powder

1/2 tsp cayenne pepper (or more for extra heat)

Salt and pepper, to taste

Vegetable oil, for frying

Fresh parsley, chopped (for garnish)

Lime wedges, for serving

Instructions

Marinate the Shrimp: In a mixing bowl, combine the buttermilk and hot sauce. Add the shrimp and toss to coat. Cover and refrigerate for at least 30 minutes (or up to 2 hours for deeper flavor).

Prepare the Coating: In another bowl, mix together the flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. In a third bowl, place the panko breadcrumbs.

Coat the Shrimp: Remove the shrimp from the buttermilk marinade, allowing excess to drip off. Dredge each piece in the flour mixture, shaking off any excess, then dip back into the buttermilk, and finally coat with the panko breadcrumbs. Ensure each shrimp is fully coated for maximum crunch.

Fry the Shrimp: In a deep skillet or heavy-bottomed pot, heat about 1 inch of vegetable oil over medium-high heat until it reaches 350°F (175°C). Carefully add the shrimp in batches, without overcrowding the pan. Fry for about 3-4 minutes, or until golden brown and crispy. Remove and drain on a plate lined with paper towels.

Serve: Arrange the crispy firecracker shrimp on a serving platter. Garnish with fresh parsley and serve with lime wedges on the side for squeezing over. You can also pair it with a spicy dipping sauce or sriracha for an extra kick!
