1.5 pounds baby red potatoes, washed and halved

1/4 cup olive oil

3 cloves garlic, minced

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

1 tablespoon fresh parsley, finely chopped

1 teaspoon sea salt

1/2 teaspoon freshly ground black pepper

1 teaspoon lemon zest

2 tablespoons balsamic vinegar

Optional: freshly grated Parmesan cheese for serving

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Prepare the Herb Marinade: In a large mixing bowl, combine the olive oil, minced garlic, chopped rosemary, thyme, parsley, sea salt, black pepper, lemon zest, and balsamic vinegar. Whisk together until all the ingredients are well mixed.

      Coat the Potatoes: Add the halved baby red potatoes to the bowl with the herb mixture. Toss them well until every potato is evenly coated with the marinade.

        Arrange on Baking Sheet: Spread the marinated potatoes in a single layer on a baking sheet lined with parchment paper. Make sure they have space between them for even cooking.

          Roast the Potatoes: Place the baking sheet in the preheated oven and roast for 25-30 minutes, or until the potatoes are golden brown and tender. You'll want to toss them halfway through to ensure they cook evenly.
