1 zucchini, sliced into half-moons

1 yellow bell pepper, diced

1 red onion, sliced

2 cups fresh spinach

1 cup mushrooms, sliced

4 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper, to taste

1 cup feta cheese, crumbled (optional)

Fresh basil leaves, for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Vegetables: In a large mixing bowl, combine the cherry tomatoes, zucchini, bell pepper, red onion, mushrooms, and spinach.
