Flavorful Grilled Chicken Shawarma

For the Chicken Marinade:

1.5 pounds boneless, skinless chicken thighs

4 cloves garlic, minced

2 teaspoons ground cumin

2 teaspoons ground coriander

2 teaspoons paprika

1 teaspoon ground turmeric

1 teaspoon ground cinnamon

1 teaspoon cayenne pepper (adjust for spice level)

1/4 cup plain yogurt

1/4 cup olive oil

Juice of 1 lemon

Salt and pepper to taste

For the Garlic Sauce:

1/2 cup mayonnaise

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon lemon juice

Salt and pepper to taste

To Serve:

Pita bread or flatbreads

Fresh vegetables (sliced cucumbers, tomatoes, and red onions)

Chopped parsley

Pickles (optional)

Marinate the Chicken: In a large bowl, combine all the marinade ingredients. Add the chicken thighs and toss to coat thoroughly. Cover and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

    Preheat the Grill: Preheat your grill to medium-high heat (about 400°F/200°C). If using a grill pan, heat it over medium-high heat on the stovetop.

      Prepare the Garlic Sauce: In a small bowl, mix together the mayonnaise, apple cider vinegar, garlic powder, lemon juice, salt, and pepper. Adjust seasoning to your preference. Set aside.

        Grill the Chicken: Remove the chicken from the marinade and shake off excess. Grill the chicken for about 5-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred. Let the chicken rest for a few minutes.

          Slice the Chicken: Once rested, slice the grilled chicken into thin strips.

            Assemble the Shawarma: On warm pita or flatbreads, layer the sliced chicken, fresh vegetables, a drizzle of garlic sauce, and additional toppings like chopped parsley or pickles.
