Ingredients

1 cup rolled oats

1 cup milk (dairy or plant-based)

1/2 cup all-purpose flour

1/2 cup whole wheat flour

1/2 cup brown sugar (packed)

1/4 cup honey or maple syrup

1/4 cup unsweetened applesauce

1 large egg

1 teaspoon vanilla extract

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon salt

1 cup fresh blueberries (or frozen, but do not thaw)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or generously grease it with cooking spray.

Soak the Oats: In a medium bowl, combine the rolled oats and milk. Let them soak for about 10-15 minutes until the oats absorb some liquid and soften.

Combine Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, brown sugar, baking powder, baking soda, cinnamon, and salt until well combined.

Prepare Wet Ingredients: In another bowl, mix the soaked oats, honey or maple syrup, applesauce, egg, and vanilla extract until thoroughly combined.

Mix Everything Together: Pour the wet mixture into the dry ingredients and gently fold until just combined. Be careful not to overmix, as this can lead to dense muffins.

Add Blueberries: Gently fold in the blueberries, ensuring they are evenly distributed throughout the batter.

Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full to allow for rising.

Bake: Bake in the preheated oven for about 18-20 minutes, or until the muffins are golden brown and a toothpick inserted in the center comes out clean.

Cool: Once baked, remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Serve and Enjoy: These muffins are best enjoyed fresh, but they can be stored in an airtight container for up to three days or frozen for longer-lasting enjoyment.
