1 cup cottage cheese

1 cup spinach, chopped (fresh or frozen)

1/2 cup cherry tomatoes, halved

1/2 cup bell pepper, diced (any color)

1/4 cup onion, finely chopped

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon black pepper

1/2 teaspoon salt (or to taste)

1/2 cup shredded cheese (cheddar, feta, or mozzarella)

Cooking spray or olive oil for greasing

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Muffin Tin: Grease a standard muffin tin with cooking spray or a light drizzle of olive oil to prevent sticking.

      Combine Ingredients: In a large mixing bowl, whisk the eggs until they are well beaten. Add the cottage cheese and mix until combined.
