1 cup buttermilk (or milk with 1 tablespoon lemon juice)

1 large egg

2 tablespoons melted unsalted butter

1 teaspoon vanilla extract

Extra butter or oil for cooking

Maple syrup for serving

Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon until well combined.

    Combine Wet Ingredients: In a separate bowl, whisk the buttermilk, egg, melted butter, and vanilla extract until fully mixed.
