1 cup ricotta cheese

1 cup all-purpose flour

1 tablespoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

2 large eggs

1/2 cup milk (adjust as needed)

Zest of 1 large lemon

2 tablespoons fresh lemon juice

2 tablespoons granulated sugar

1 teaspoon vanilla extract

Butter or oil for cooking

Prepare the Wet Ingredients: In a large mixing bowl, whisk together the ricotta cheese, eggs, milk, lemon zest, lemon juice, sugar, and vanilla extract until well combined and smooth.

    Combine Dry Ingredients: In another bowl, mix the flour, baking powder, baking soda, and salt together.
