4 cups cooked chicken, shredded (rotisserie works great)

1 can (10.5 oz) cream of mushroom soup

1 can (10.5 oz) cream of celery soup

1 cup sour cream

1 cup chicken broth

1 cup uncooked white rice

2 cups frozen mixed vegetables (carrots, peas, corn, green beans)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

1 ½ cups shredded cheddar cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large mixing bowl, combine the cream of mushroom soup, cream of celery soup, sour cream, chicken broth, garlic powder, onion powder, dried thyme, salt, and pepper. Mix well until smooth.

      Stir in the uncooked white rice, shredded chicken, and frozen mixed vegetables until evenly coated in the sauce.

        Transfer the mixture into a greased 9x13 inch baking dish, spreading it evenly.

          Cover the dish tightly with aluminum foil to retain moisture during baking.

            Bake in the preheated oven for 1 hour. After 1 hour, remove the foil and sprinkle the shredded cheddar cheese evenly over the top.

              Return the casserole to the oven and bake uncovered for an additional 15-20 minutes, or until the cheese is bubbly and lightly golden.

                Remove from the oven and let it sit for 10 minutes before serving. Garnish with freshly chopped parsley for a pop of color.
