Fresh Raspberry Tiramisu

1 cup fresh raspberries (plus extra for garnish)

1 cup mascarpone cheese

1 cup heavy cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup brewed espresso or strong coffee, cooled

1/2 cup coffee liqueur (optional)

24 ladyfinger cookies

Cocoa powder (for dusting)

Zest of 1 lemon

Mint leaves (for garnish)

Prepare the Coffee Mixture: In a shallow dish, combine the brewed espresso and coffee liqueur (if using). Set aside to cool.

    Make the Raspberry Mixture: In a blender or food processor, puree the fresh raspberries until smooth. Strain to remove the seeds if desired. Set aside.

      Whip the Cream: In a large mixing bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form. Be careful not to overwhip.

        Combine Mascarpone: In a separate bowl, gently fold the mascarpone cheese into the whipped cream until well combined. Take care to keep the mixture light and airy.

          Layering: Quickly dip each ladyfinger into the coffee mixture, ensuring they soak but do not become soggy. Layer half of the soaked ladyfingers at the bottom of a serving dish.

            Add Raspberry Puree: Spread half of the raspberry puree over the layer of ladyfingers. Then, spread half of the mascarpone mixture over the raspberry layer.

              Repeat Layers: Add another layer of soaked ladyfingers, followed by the remaining raspberry puree, and finish with the remaining mascarpone mixture on top.

                Chill: Cover the tiramisu with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.

                  Serve: Before serving, dust the top with cocoa powder, and sprinkle lemon zest for added freshness. Garnish with fresh raspberries and mint leaves.
