Ingredients

4 cups fresh watermelon, cut into 1-inch cubes

1 cup crumbled feta cheese

1/2 cup fresh mint leaves, torn

1/4 cup red onion, thinly sliced

2 tablespoons olive oil

1 tablespoon balsamic vinegar

Salt and pepper to taste

Optional: 1 tablespoon lime juice

Instructions

Prepare the Watermelon: Start by cutting the watermelon into 1-inch cubes. Place them in a large mixing bowl.

Add Feta and Mint: Gently fold in the crumbled feta cheese and the torn mint leaves into the watermelon. Be careful to not mash the feta.

Add Onions: Add the thinly sliced red onions to the bowl, ensuring even distribution.

Make the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, and season with salt and pepper. If using, add the lime juice for a zesty kick.

Combine: Drizzle the dressing over the watermelon mixture and gently toss everything to coat.

Serve: Let the salad sit for about 10 minutes to allow the flavors to meld. Serve chilled or at room temperature.

Garnish: Optional – sprinkle some extra mint leaves on top before serving for freshness and presentation.
