8 oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1 cup fresh strawberries, diced

8 slices of brioche or challah bread

1 cup crushed graham crackers

2 eggs, beaten

1 cup milk

1 cup all-purpose flour

1 tsp baking powder

1/2 tsp salt

Vegetable oil for frying

Whipped cream (for serving)

Additional strawberries for garnish (optional)

Prepare the Cheesecake Filling: In a medium mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix with a hand mixer until smooth and creamy. Gently fold in the diced strawberries.

    Assemble the Sandwiches: Spread a generous amount of the strawberry cheesecake filling on one slice of bread, then top with another slice to create a sandwich. Repeat this process with the remaining bread and filling until you have 4 sandwiches.

      Set Up Breading Station: In one bowl, combine the flour, baking powder, and salt. In another bowl, pour the milk, and in a third bowl, place the beaten eggs. Finally, put the crushed graham crackers in a plate.

        Bread the Sandwiches: Dip each sandwich first into the flour mixture, shaking off any excess, then into the milk, followed by the beaten eggs, and finally coat it with the crushed graham crackers, pressing gently to ensure the crumbs stick.

          Fry the Sandwiches: In a large skillet, heat about 1 inch of vegetable oil over medium heat. Once hot, carefully place the breaded sandwiches in the oil (you may have to do this in batches). Fry until golden brown and crispy, about 2-3 minutes per side.

            Drain and Serve: Remove the sandwiches from the oil and let them drain on a plate lined with paper towels. Serve warm, topped with whipped cream and sliced strawberries if desired.
