Ingredients

8 slices of thick bread (brioche or Texas toast work best)

8 oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1 cup fresh strawberries, hulled and sliced

1 cup graham cracker crumbs

2 large eggs

1/2 cup milk

1/4 cup granulated sugar

1 tsp cinnamon

Vegetable oil, for frying

Optional: Whipped cream and additional strawberries for serving

Instructions

Prepare the Cheesecake Filling:

In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Use an electric mixer or whisk until smooth and well blended.

      Assemble the Sandwiches:

Spread a generous layer of the cream cheese mixture on four slices of bread. Top with sliced strawberries and then place another slice of bread on top of each to create a sandwich, pressing down gently to secure.

          Prepare the Coating:

In a shallow bowl, whisk together the eggs and milk until combined. In another bowl, mix the graham cracker crumbs, granulated sugar, and cinnamon.

              Coat the Sandwiches:

Dip each sandwich first into the egg mixture, allowing any excess to drip off. Then roll the sandwiches in the graham cracker crumb mixture, ensuring they are well coated.

                  Heat the Oil:

In a large skillet or frying pan, heat about 1/2 inch of vegetable oil over medium heat. The oil is ready when a small amount of batter sizzles upon contact.

                      Fry the Sandwiches:

Carefully place two or three sandwiches in the hot oil, ensuring not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown and crispy. Use a slotted spatula to flip them, and then transfer to a paper towel-lined plate to drain excess oil.

                          Serve:

Allow the sandwiches to cool slightly, then cut them diagonally. Serve warm with a dollop of whipped cream and additional sliced strawberries if desired.
