Ingredients

2 cups plain Greek yogurt

1/2 cup honey or maple syrup (for a vegan option)

1/2 cup fresh lemon juice (about 2-3 lemons)

Zest of 2 lemons

1/4 teaspoon salt

1 teaspoon vanilla extract

Optional: 1/2 cup fresh berries (blueberries, raspberries, or strawberries) for added flavor and decoration

Instructions

Prepare the Mixture: In a medium mixing bowl, combine the Greek yogurt, honey (or maple syrup), fresh lemon juice, lemon zest, salt, and vanilla extract. Stir thoroughly until the mixture is smooth and well blended.

Taste Test: Give your mixture a little taste test! Adjust sweetness with more honey or syrup if desired, or add extra zest for a more pronounced lemon flavor.

Add Berries (Optional): If you're including berries, gently fold them into the yogurt mixture, ensuring they are evenly distributed.

Prepare the Pan: Line an 8x8 inch (or similar size) square baking dish with parchment paper, leaving some overhang for easy removal later.

Pour Mixture Into Pan: Carefully pour the lemon yogurt mixture into the prepared dish. Use a spatula to spread it evenly, smoothing the top.

Freeze: Place the baking dish in the freezer. Freeze for at least 4-6 hours or until solid.

Cut into Bars: Once frozen, remove the dish from the freezer. Use the overhanging parchment paper to lift the bars out of the pan. Cut into squares or rectangles, as desired.

Serve and Enjoy: Serve immediately or store any leftovers in an airtight container in the freezer for a quick refreshing treat whenever you crave it!
