2 cups fresh or frozen peaches, diced

1 tablespoon lemon juice

1 teaspoon cinnamon

1 cup Greek yogurt (vanilla or plain)

1/2 cup honey or maple syrup (adjust for sweetness)

1/4 cup rolled oats

1/4 cup brown sugar (optional)

1/4 cup crushed graham crackers or biscuit crumbs (for texture)

Instructions
 

Prep the Peaches: If using fresh peaches, peel and dice them. In a mixing bowl, combine the diced peaches with lemon juice and cinnamon. Stir well and let them sit for about 10 minutes to macerate. This will draw out the juices and enhance the flavor.

    Blend the Yogurt Base: In another bowl, mix the Greek yogurt and honey (or maple syrup). If you prefer a sweeter pop, add the brown sugar and mix until combined and smooth.

      Combine Ingredients: Gently fold the prepared peaches into the yogurt mixture. Ensure that the peaches are evenly distributed throughout the yogurt, but be careful not to over-mix, as you want to keep some chunks of peach for texture.

        Add the Oats and Cracker Crumbs: Stir in the rolled oats and the crushed graham crackers or biscuit crumbs, mixing just enough to distribute them throughout the mixture.

          Fill the Molds: Pour the yogurt-peach mixture into popsicle molds, leaving a little space at the top for expansion. If you don’t have popsicle molds, you can use small cups with sticks.

            Insert Sticks: If using traditional popsicle molds, insert the sticks. If using cups, place a stick in the center of each cup.

              Freeze: Place the molds in the freezer and allow them to freeze for at least 4-6 hours, or until solid.

                Unmold and Enjoy: To release the pops, run the molds under warm water for a few seconds or gently pull them out. Serve immediately and enjoy the refreshing taste of summer!
