Ingredients

2 cups fresh or frozen raspberries

1 cup Greek yogurt (plain or vanilla)

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

A pinch of salt

1 cup granola or crushed nuts (optional, for added crunch)

Fresh mint leaves (for garnish, optional)

Instructions

Prepare the Raspberries: If using fresh raspberries, rinse them gently under cool water and let them dry on a paper towel. If using frozen raspberries, let them thaw for about 15 minutes and gently pat them dry as well.

Mix the Yogurt: In a medium mixing bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, and a pinch of salt. Use a whisk or spatula to blend everything together until smooth. Taste the mixture and adjust sweetness as desired.

Coat the Raspberries: If you want to add a crunchy layer, pour the granola or crushed nuts into a shallow bowl. Take each raspberry and dip it in the yogurt mixture to coat completely, then roll it in the granola or nuts (if using) to cover the sides.

Arrange on a Sheet: Line a baking sheet with parchment paper. Place each yogurt-coated raspberry on the sheet, ensuring they are spaced apart to prevent sticking.

Freeze Until Firm: Once all the clusters are made, transfer the baking sheet to the freezer. Allow them to freeze for at least 2-3 hours or until firm.

Serve and Enjoy: Once frozen, carefully remove the raspberry yogurt clusters from the parchment paper and serve immediately or store them in an airtight container in the freezer for up to 2 weeks. Garnish with fresh mint leaves before serving for an extra touch of freshness.
