1 cup crushed graham crackers (plus extra for topping)

Prepare the Strawberries: In a mixing bowl, combine the sliced strawberries, honey (or maple syrup), and lemon juice. Toss gently to combine, then let sit for about 10-15 minutes to macerate. This will draw out their juices and enhance sweetness.

    Make the Yogurt Mixture: In another bowl, whisk together the Greek yogurt, whipped cream, vanilla extract, and a pinch of salt until smooth and well combined. Taste and adjust sweetness if needed.

      Layer the Pops: Begin by spooning a thin layer of the yogurt mixture into the bottom of the popsicle molds. Next, add a layer of the macerated strawberries, followed by a sprinkle of crushed graham crackers. Repeat this layering process until the molds are filled, finishing with a layer of yogurt and a few extra strawberries on top for garnish. Top with more crushed graham crackers to mimic the crust.

        Insert Sticks: If your molds come with lids, place them on top; otherwise, insert popsicle sticks into each mold after about 10 minutes in the freezer to allow the yogurt to set slightly.
