Ingredients

2 cups plain Greek yogurt

1/2 cup honey or maple syrup (adjust for sweetness)

1 teaspoon pure vanilla extract

1 teaspoon ground cinnamon

2 medium-sized apples (Granny Smith or Honeycrisp), cored and diced

1/2 cup granola or crushed cinnamon graham crackers

1 tablespoon lemon juice

1/4 teaspoon salt

Optional: 1/4 cup chopped nuts (walnuts or pecans)

Instructions

Prepare the Apples:

    - In a mixing bowl, combine the diced apples with lemon juice, cinnamon, and a pinch of salt, tossing gently to coat. Set aside to let the flavors meld.

      Make the Yogurt Mixture:

        - In another bowl, whisk together the Greek yogurt, honey (or maple syrup), vanilla extract, and remaining ground cinnamon until smooth and creamy.

          Combine:

            - Gently fold the cinnamon-spiced apples into the yogurt mixture, ensuring the apples are evenly distributed.

              Prepare the Molds:

                - If using ice pop molds, fill each mold about two-thirds full with the yogurt-apple mixture. If desired, sprinkle some granola or crushed graham crackers between layers for added crunch.

                  Insert Sticks:

                    - If your molds have a central stick holder, insert sticks into the yogurt mixture. If you’re using small paper cups, place a wooden stick or plastic spoon into the center of each cup.

                      Freeze:

                        - Place the molds or cups in the freezer for at least 4-6 hours, or until completely frozen.

                          Serve:

                            - To release the frozen yogurt sticks, run warm water over the outside of the molds or cups for a few seconds. Gently pull out the sticks and enjoy!

                              Optional Topping:

                                - Before serving, sprinkle additional granola or crushed cinnamon graham crackers on top for an extra crunch, or drizzle with a bit of honey.
