Ingredients

2 cups fresh blueberries

1 cup plain Greek yogurt

1/2 cup honey (or maple syrup for a vegan option)

1 teaspoon vanilla extract

1 cup rolled oats

1/4 cup almond flour (or flour of choice)

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 cup chopped nuts (e.g., walnuts or almonds) - optional

1/3 cup mini chocolate chips - optional

Instructions

Prepare the Muffin Base: In a large mixing bowl, combine the rolled oats, almond flour, baking powder, salt, and cinnamon. Stir until well mixed.

Mix the Wet Ingredients: In another bowl, mix together the Greek yogurt, honey (or maple syrup), and vanilla extract until smooth.

Combine Mixtures: Pour the yogurt mixture into the dry ingredients and gently fold until just combined. Avoid overmixing as it may result in a denser texture.

Add Blueberries: Gently fold in the fresh blueberries, ensuring they are evenly distributed throughout the mixture. If using, add chopped nuts and mini chocolate chips at this stage.

Portion the Mixture: Line a muffin tin with silicone muffin cups or paper liners. Spoon the mixture into each muffin cup, filling them almost to the top.

Freeze: Place the muffin tin in the freezer for about 2-3 hours or until the muffin clusters are fully frozen.

Serve: Once frozen, carefully pop the muffin clusters out of the muffin cups and serve immediately. You can store any leftovers in an airtight container in the freezer for a refreshing snack at any time.

Optional Toppings: Before serving, you can drizzle additional honey or a sprinkle of granola over the clusters for extra crunch and flavor.
