2 ripe peaches, pitted and diced

2 cups plain Greek yogurt

1/4 cup honey (or maple syrup for a vegan option)

1 teaspoon vanilla extract

1/2 teaspoon cinnamon (optional)

1/4 cup chopped almonds or granola (for added crunch, optional)

6-8 popsicle sticks or plastic pop molds

Blend the Base: In a blender or food processor, combine the diced peaches, Greek yogurt, honey (or maple syrup), vanilla extract, and cinnamon. Blend until smooth and creamy. Taste and adjust sweetness if desired.

    Prepare the Molds: If you want extra texture, mix in the chopped almonds or granola into the yogurt mixture.

      Fill the Molds: Pour the peach yogurt mixture into popsicle molds, leaving a little space at the top for expansion as they freeze.

        Insert Sticks: If using popsicle molds with a hole, insert the popsicle sticks into the center of each pop. If using a different mold, freeze without the sticks until they are firm enough to hold the sticks.

          Freeze: Place the molds in the freezer and freeze for at least 4-6 hours, or until completely solid.

            Unmold the Pops: To release the pops, run warm water over the outside of the molds for a few seconds. Gently pull on the popsicle sticks to remove.
