Garlic Butter Hasselback Potatoes

4 medium-sized Russet potatoes

1/2 cup unsalted butter, melted

4 cloves garlic, finely minced

2 tablespoons fresh rosemary, finely chopped

1 tablespoon fresh thyme leaves

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped for garnish

Optional: Grated Parmesan cheese, for topping

Instructions
 

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

    Prepare the potatoes: Wash and scrub the Russet potatoes thoroughly. Pat them dry with a towel. Using a sharp knife, make thin, evenly spaced slices down the length of each potato, ensuring you don't cut all the way through. Place wooden spoons or chopsticks on either side of the potato to stop the knife from going all the way through.

      Make the garlic butter mixture: In a medium bowl, combine the melted butter, minced garlic, chopped rosemary, thyme leaves, smoked paprika, and a pinch of salt and pepper. Mix well to combine.

        Apply the garlic butter: Brush the garlic butter mixture generously over the tops of the potatoes, ensuring some seeps into the cuts. Reserve some of the butter mixture for later basting.

          Bake the potatoes: Place the prepared potatoes on the lined baking sheet. Bake in the preheated oven for about 45-50 minutes, basting with the reserved garlic butter mixture every 15 minutes. The potatoes are ready when they are crispy on the outside and tender on the inside.

            Add optional toppings: For an extra indulgence, sprinkle grated Parmesan cheese over the potatoes during the last 5 minutes of baking.

              Garnish and serve: Once the potatoes are done cooking, remove them from the oven. Garnish with freshly chopped parsley before serving.
