2 lobster tails, thawed and split in half

8 large sea scallops

1/2 cup unsalted butter (1 stick)

4 cloves garlic, minced

2 tablespoons fresh parsley, chopped

1 tablespoon fresh lemon juice

1 teaspoon paprika

Salt and pepper to taste

Lemon wedges (for serving)

Preparation of Ingredients: Begin by thawing the lobster tails if frozen. Use kitchen scissors to split the lobster tails down the middle for easier cooking. Rinse the scallops under cold water and pat dry with paper towels.

    Make Garlic Butter: In a small saucepan over low heat, melt the butter. Once melted, add the minced garlic and sauté for 1-2 minutes until fragrant (be careful not to burn the garlic). Remove from heat and stir in the chopped parsley, lemon juice, paprika, and season with salt and pepper to taste.

      Cook the Lobster Tails: Preheat your grill or stovetop grill pan over medium-high heat. Brush the cut sides of the lobster tails with some of the garlic butter. Place the lobster tails cut-side down on the grill and cook for 5-6 minutes. Flip them over, brush with more garlic butter, and cook for an additional 3-4 minutes until the lobster is opaque and cooked through.

        Sear the Scallops: In a separate skillet, heat a tablespoon of the garlic butter over medium-high heat. Once hot, add the scallops in a single layer. Sear them for 2-3 minutes on one side without moving them. Flip and add another tablespoon of garlic butter, cooking for an additional 2 minutes until they develop a golden crust and are opaque in the center.

          Combine & Serve: Arrange the lobster tails and seared scallops on a serving platter. Drizzle any remaining garlic butter over the top and garnish with additional parsley. Serve immediately with lemon wedges on the side for an extra zing.
