1 lb sirloin steak, cut into bite-sized pieces

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon dried thyme (or fresh if available)

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prepare the Potatoes: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the halved baby potatoes to the skillet, season with salt and pepper, and cook until they are golden brown and fork-tender, about 15-20 minutes. Stir occasionally to ensure even cooking.

    Cook the Steak: While the potatoes are cooking, season the sirloin steak pieces with salt, pepper, and paprika. Once the potatoes are cooked, remove them from the skillet and set aside. In the same skillet, increase the heat to medium-high and add the steak. Cook the steak for about 4-5 minutes until browned and cooked to your desired doneness. Remove the steak from the skillet and set aside.

      Make Garlic Butter: In the skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and thyme, sautéing for about 1-2 minutes until fragrant. Be careful not to burn the garlic.

        Combine the Ingredients: Return the cooked steak and potatoes to the skillet. Toss everything together in the garlic butter sauce, ensuring the steak and potatoes are well coated. Cook for an additional 2-3 minutes to heat through and combine flavors.

          Serve: Remove from heat, garnish with fresh chopped parsley, and serve warm.
