2 pork tenderloins (about 1 pound each)

6 cloves garlic, minced

2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried)

2 tablespoons fresh thyme, chopped (or 1 tablespoon dried)

1 tablespoon fresh parsley, chopped

1 tablespoon olive oil

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon paprika (optional for color)

1 lemon, zested and juiced

1 tablespoon balsamic vinegar

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a roasting pan with parchment paper for easier cleanup.

    Prepare the Marinade: In a small bowl, combine minced garlic, rosemary, thyme, parsley, olive oil, salt, black pepper, paprika, lemon zest, lemon juice, and balsamic vinegar. Mix well until all the herbs and spices are fully incorporated.

      Marinate the Pork: Pat the pork tenderloins dry with paper towels. Rub the garlic herb mixture over the tenderloins, ensuring they are evenly coated. For best flavor, cover and let marinate in the refrigerator for at least 30 minutes, or up to 2 hours if time permits.

        Sear the Pork: Heat a large skillet over medium-high heat. Add a drizzle of olive oil. Once hot, sear the tenderloins for about 2-3 minutes on each side, until they develop a nice golden-brown crust.
