Ingredients

2 pounds baby potatoes (halved)

4 tablespoons olive oil

4 cloves garlic (minced)

1 tablespoon fresh rosemary (chopped)

1 tablespoon fresh thyme (chopped)

1 tablespoon fresh parsley (chopped)

1 teaspoon sea salt

½ teaspoon black pepper

½ teaspoon paprika (optional for extra flavor)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare the Potatoes: In a large mixing bowl, combine the halved baby potatoes with olive oil, minced garlic, rosemary, thyme, parsley, sea salt, black pepper, and paprika. Toss until the potatoes are evenly coated with the herb mixture.

Bake the Potatoes: Spread the seasoned potatoes in a single layer on a large baking sheet. Make sure they are cut side down to help them brown beautifully.

Roasting Time: Roast the potatoes in the preheated oven for 30-35 minutes, or until they are golden brown and crispy on the outside. Halfway through the cooking time, give them a gentle stir to ensure even roasting.

Final Touches: Once cooked, remove the potatoes from the oven and let them cool for a couple of minutes. Taste and adjust seasoning if necessary—add more salt or herbs to your liking.

Serve: Serve the garlic herb roasted potatoes warm, garnished with extra fresh herbs if desired. Enjoy as a perfect side dish for any meal!
