Ingredients

1 pound fresh sea scallops

3 tablespoons unsalted butter

3 cloves garlic, minced

Zest of 1 lemon

2 tablespoons fresh lemon juice

Salt and black pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Prepare the Scallops: Pat the scallops dry with paper towels. This step is crucial for achieving a nice sear. Season both sides of the scallops with salt and black pepper.

Heat the Pan: In a large skillet, heat the olive oil over medium-high heat.

Sear the Scallops: Once the oil is hot, carefully place the scallops in the skillet, making sure not to crowd the pan. Sear for about 2-3 minutes without moving them, until a golden-brown crust forms.

Flip and Add Flavor: Flip the scallops using tongs and add the butter and minced garlic to the pan. Allow the scallops to cook for an additional 2-3 minutes, basting with the melted butter.

Incorporate Lemon: After the scallops are cooked through and opaque, add the lemon zest and lemon juice to the pan. Gently toss the scallops in the mixture to coat them.

Garnish & Serve: Remove from heat, garnish with chopped parsley, and serve with lemon wedges on the side.
