Ingredients

1 lb ground chicken

1 cup breadcrumbs (preferably Italian seasoned)

1/2 cup grated Parmesan cheese

1/4 cup minced fresh parsley

3 cloves garlic, minced

1/2 cup finely chopped onion

1 large egg

1/4 cup milk

1 tsp salt

1/2 tsp black pepper

1 tsp dried oregano

1 tsp dried basil

1/2 cup shredded mozzarella cheese (for topping)

2 tbsp olive oil (for drizzling)

1/4 cup marinara sauce (optional, for serving)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a loaf pan or line it with parchment paper for easy removal.

Prepare the Mixture: In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan, minced parsley, minced garlic, chopped onion, egg, milk, salt, black pepper, oregano, and basil. Mix thoroughly until all ingredients are well combined.

Shape the Meatloaf: Transfer the chicken mixture into the prepared loaf pan and shape it into an even loaf.

Add Mozzarella Topping: Sprinkle the shredded mozzarella cheese evenly on top of the meatloaf, ensuring it covers the surface.

Drizzle with Olive Oil: Drizzle the olive oil over the top of the cheese to help it brown and become crispy.

Bake: Place the meatloaf in the preheated oven and bake for about 55-60 minutes, or until the internal temperature reaches 165°F (74°C) and the top is golden and bubbly.

Rest & Slice: Once cooked, remove the meatloaf from the oven and let it rest for 10 minutes. This will help it retain its juices when sliced.

Serve: Slice the meatloaf and serve it warm, optionally accompanied by a side of marinara sauce for dipping. Enjoy your cheesy and flavorful Garlic Parmesan Chicken Meatloaf!
