Garlic Parmesan Chicken Pasta Bake

8 oz penne pasta

2 cups cooked chicken, shredded or diced

2 cups fresh spinach

1 cup cherry tomatoes, halved

4 cloves garlic, minced

2 cups mozzarella cheese, shredded (divided)

1 cup Parmesan cheese, grated

1 cup heavy cream

1 cup chicken broth

2 tbsp olive oil

1 tsp dried Italian herbs (basil, oregano, thyme)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook for about 2-3 minutes less than the package instructions; it should be al dente since it will continue cooking in the oven. Drain and set aside.

      Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the minced garlic, and sauté for about 1 minute until fragrant. Then, add the cherry tomatoes and spinach, cooking until the spinach is wilted (about 2-3 minutes). Season with salt, pepper, and dried Italian herbs.

        Combine Ingredients: In a large mixing bowl, combine the cooked pasta, chicken, sautéed vegetables, and half of the mozzarella and Parmesan cheese. Mix well.

          Make the Sauce: In a separate bowl, whisk together the heavy cream and chicken broth until well combined. Pour this mixture over the pasta and chicken mixture, and stir until everything is coated.

            Prepare for Baking: Transfer the mixture to a greased 9x13 inch baking dish. Top with the remaining mozzarella and Parmesan cheese, ensuring an even layer.
