4 cups all-purpose flour

2 teaspoons instant yeast

2 teaspoons salt

1 teaspoon sugar

1 ½ cups warm water (110°F)

½ cup extra virgin olive oil

6 cloves garlic, minced

1 cup grated Parmesan cheese

2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried rosemary)

Sea salt, for topping

Instructions
 

Prepare the Dough: In a large mixing bowl, combine the flour, instant yeast, salt, and sugar. Stir to combine. Gradually add the warm water and ¼ cup of olive oil, mixing until a shaggy dough forms.

    Knead and Rise: Turn the dough onto a lightly floured surface and knead for about 5 minutes, until smooth. Place the dough in a greased bowl, cover with a kitchen towel, and let rise in a warm area for 1-1.5 hours, or until doubled in size.

      Prepare the Pan: Grease a 13x18 inch baking sheet or a large rectangular pan with the remaining ¼ cup of olive oil.

        Shape the Dough: Once the dough has risen, punch it down and transfer it to the prepared baking sheet. Gently stretch and spread the dough to fit the pan, using your fingers to make deep dimples all over the surface.

          Garlic Infusion: In a small bowl, mix the minced garlic with a tablespoon of olive oil. Brush it evenly over the surface of the dough, ensuring the garlic is spread out.

            Add Cheese and Herbs: Sprinkle the grated Parmesan cheese evenly across the dough and follow with the chopped rosemary. Finish by sprinkling sea salt over the top.

              Final Rise: Cover the focaccia lightly with plastic wrap or a kitchen towel and let it rise again for about 30 minutes while you preheat the oven to 425°F (220°C).

                Bake: Bake the focaccia in the preheated oven for 20-25 minutes or until golden brown and crispy on the edges.

                  Cool and Serve: Remove the focaccia from the oven and let it cool in the pan for about 10 minutes, then transfer it to a wire rack to cool slightly. Cut into squares or strips and serve warm.
