1 cup granulated sugar

1/4 cup packed light brown sugar

1/4 teaspoon salt

2 tablespoons water

1 teaspoon pure vanilla extract

1 cup pecans, chopped (toasted if preferred)

1 cup semisweet chocolate chips

Flaky sea salt, for garnish

Prepare Your Baking Sheet: Line a baking sheet with parchment paper, ensuring it extends over the edges for easy removal later. If desired, lightly grease the parchment paper with oil for extra easy release.

    Melt the Butter: In a medium saucepan over medium heat, melt the unsalted butter, stirring occasionally until it starts to foam.

      Add Sugars: Once the butter is melted, add granulated sugar, brown sugar, salt, and water to the saucepan. Stir continuously until the sugar has dissolved and the mixture begins to bubble.

        Cook the Toffee: Bring the mixture to a rolling boil, resisting the urge to stir. Allow it to boil gently for about 8-10 minutes or until the mixture reaches a deep amber color, using a candy thermometer for precision (cooking to 300°F or the hard crack stage).

          Incorporate Vanilla: Once your toffee reaches the proper temperature, quickly remove it from heat and stir in the vanilla extract.

            Add Pecans: Carefully fold in the chopped pecans, mixing well until they're fully coated with the toffee.

              Pour the Mixture: Quickly pour the toffee mixture onto the prepared baking sheet, spreading it evenly with a spatula. Let it cool for about 5 minutes.

                Chocolate Topping: While the toffee is still warm, sprinkle the chocolate chips evenly over the top. Allow the heat from the toffee to melt the chocolate for about 5 minutes. Once melted, use a spatula to spread the chocolate into an even layer.

                  Garnish & Set: Sprinkle flaky sea salt over the top of the chocolate layer. Let the toffee cool completely at room temperature or in the refrigerator for about 1 hour until set.
