4 medium-sized potatoes (preferably starchy potatoes like Russets or Yukon Gold)

1 medium onion, finely grated

2 large eggs

1/2 cup all-purpose flour

1 tsp baking powder

Salt and freshly ground black pepper, to taste

1/4 cup fresh parsley, chopped (optional)

Vegetable oil, for frying (such as canola or sunflower oil)

Applesauce or sour cream, for serving

Prepare the Potatoes: Peel the potatoes and soak them in cold water to prevent browning. Grate the potatoes using a box grater or a food processor with a grating attachment. After grating, place the potatoes in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This step is crucial for crispy pancakes.

    Combine Ingredients: In a large mixing bowl, combine the grated potatoes, finely grated onion, eggs, flour, baking powder, and chopped parsley (if using). Season with salt and pepper. Mix until everything is well incorporated. The mixture should be thick but not dry.

      Heat the Oil: In a large skillet or frying pan, pour enough vegetable oil to cover the bottom with about 1/4 inch depth. Heat the oil over medium-high heat until it shimmers.

        Form and Fry: Using a tablespoon or ice cream scoop, drop small amounts of the potato mixture into the hot oil, flattening each portion slightly with the back of the spoon to form pancakes. Do not overcrowd the pan; fry them in batches if necessary.
