1 ½ lbs (about 6 medium) Yukon Gold potatoes, peeled and diced

1 medium onion, finely chopped

2 cloves garlic, minced

4 slices thick-cut bacon, chopped

4 cups low-sodium chicken or vegetable broth

1 cup heavy cream

1 cup kale, chopped

1 tablespoon Dijon mustard

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons fresh chives, chopped (for garnish)

Instructions
 

In a large pot over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and set it aside on a paper towel to drain, leaving the rendered fat in the pot.

    Add the chopped onion to the pot with the bacon fat and sauté for about 5 minutes, until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.
