2 ½ cups all-purpose flour

1 tsp baking soda

1 tbsp ground ginger

1 tbsp ground cinnamon

½ tsp ground nutmeg

½ tsp ground cloves

½ tsp salt

1 cup unsalted butter, softened

1 cup packed brown sugar

½ cup granulated sugar

4 large eggs

1 cup molasses

1 cup hot water

1 tsp vanilla extract

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch cake pan or two 9-inch round cake pans.

    Mix Dry Ingredients: In a large mixing bowl, sift together the flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt. Set aside.

      Beat the Butter and Sugars: In another bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy. This should take about 3-4 minutes.

        Add Eggs and Molasses: Beat in the eggs one at a time, ensuring each is well incorporated. Then, gradually mix in the molasses and vanilla extract until everything is smooth.

          Combine and Blend: Alternate adding the dry ingredient mixture and the hot water to the butter mixture, starting and ending with the dry ingredients. Mix gently until just combined, being careful not to overmix.

            Pour and Bake: Pour the batter into the prepared cake pan(s) and smooth the top. Bake in the preheated oven for 30-35 minutes for round cakes or 40-45 minutes for a 9x13 cake, or until a toothpick inserted in the center comes out clean.

              Cool and Serve: Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. Serve it plain, or add a dusting of powdered sugar, whipped cream, or a cream cheese frosting for extra indulgence.
