Ingredients
  

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground ginger

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon salt

¾ cup brown sugar, packed

¼ cup granulated sugar

2 large eggs

¾ cup milk (or buttermilk for extra moisture)

½ cup unsweetened applesauce

½ cup molasses

½ cup vegetable oil

1 teaspoon vanilla extract

Optional: ½ cup chopped crystallized ginger or walnuts for added texture

Instructions
 

Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease with cooking spray to prevent sticking.

    In a large bowl, whisk together the flour, baking soda, baking powder, ground ginger, cinnamon, nutmeg, and salt until well combined.

      In another bowl, mix the brown sugar, granulated sugar, eggs, milk, applesauce, molasses, vegetable oil, and vanilla extract until everything is blended smoothly.

        Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are fine.

          If you’re adding crystallized ginger or walnuts, fold them in gently to distribute evenly throughout the batter.

            Divide the batter evenly among the prepared muffin cups, filling each about ¾ full to allow for rising.

              Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                Remove the muffins from the oven and let them cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
