Golden Crispy Crab Cakes

1 lb fresh lump crab meat, picked over for shells

1/2 cup finely chopped red bell pepper

1/4 cup finely chopped green onion

1/4 cup mayonnaise

1 large egg

1 tablespoon Dijon mustard

1 teaspoon Worcestershire sauce

1 teaspoon Old Bay seasoning

1/2 cup breadcrumbs (plus more for coating)

Salt and pepper, to taste

1/4 cup chopped fresh parsley

3 tablespoons olive oil (for frying)

Lemon wedges, for serving

Prepare the Mixture: In a large bowl, combine the fresh lump crab meat, chopped red bell pepper, green onion, mayonnaise, egg, Dijon mustard, Worcestershire sauce, Old Bay seasoning, breadcrumbs, salt, pepper, and parsley. Mix gently to avoid breaking up the crab meat too much.

    Chill the Mixture: Once well combined, cover the bowl with plastic wrap and refrigerate for at least 30 minutes. This helps the mixture to firm up, making it easier to shape into cakes.

      Shape the Crab Cakes: After chilling, scoop out about 1/4 cup of the mixture and gently form it into a patty, about 1/2 inch thick. Repeat until all the mixture is used up. You should have about 8-10 crab cakes.

        Coat the Crab Cakes: Place additional breadcrumbs on a plate. Lightly coat each crab cake in the breadcrumbs, pressing gently to adhere.

          Heat the Oil: In a large skillet, heat the olive oil over medium heat until shimmering.

            Fry the Cakes: Carefully add the crab cakes to the skillet (work in batches if necessary). Cook for about 4-5 minutes on each side or until they are golden brown and crispy. Avoid overcrowding the pan to ensure even cooking.

              Drain: Once cooked, transfer the crab cakes to a plate lined with paper towels to drain excess oil.

                Serve: Serve warm with lemon wedges and your choice of dipping sauce, such as tartar sauce or a spicy remoulade.
