3 cups old-fashioned rolled oats

1 cup pecans, roughly chopped

1/2 cup pumpkin seeds

1/2 teaspoon ground cinnamon

1/4 teaspoon sea salt

1/2 cup pure maple syrup

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1/2 cup dried cranberries (optional)

1/2 cup dark chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper for easy cleanup.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped pecans, pumpkin seeds, ground cinnamon, and sea salt. Stir until the ingredients are well mixed.

      Combine Wet Ingredients: In a separate bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract until smooth.

        Combine Mixtures: Pour the wet mixture over the dry ingredients. Using a spatula or wooden spoon, mix well until all the dry ingredients are evenly coated.

          Spread on Baking Sheet: Spread the granola mixture evenly onto the prepared baking sheet, pressing it down firmly to help it clump together.

            Bake: Bake in preheated oven for 20-25 minutes, stirring halfway through to ensure even browning. The granola should be golden brown and fragrant.

              Cool Down: Remove from the oven and allow the granola to cool completely on the baking sheet; it will crisp up as it cools.

                Add Mix-ins: Once cooled, if desired, sprinkle the dried cranberries and dark chocolate chips over the granola. Mix gently to combine.

                  Store: Transfer the granola to an airtight container. It can be stored at room temperature for up to two weeks.
