4 large portobello mushrooms, stems removed

1 cup breadcrumbs (panko for extra crunch)

½ cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

½ cup all-purpose flour (for dredging)

2 large eggs, beaten

4 burger buns

1 cup fresh spinach or arugula

Sliced tomatoes and avocado for topping

Olive oil for brushing

Prep the Mushrooms: Preheat your oven to 400°F (200°C). Clean the portobello mushrooms by gently wiping them with a damp cloth. Remove the stems and use a small spoon to scoop out the gills.

    Make the Coating: In a shallow dish, combine the breadcrumbs, grated Parmesan cheese, chopped parsley, minced garlic, onion powder, paprika, salt, and pepper. Mix well to ensure even distribution.

      Dredge the Mushrooms: Set up a dredging station with three shallow dishes: one with flour, one with beaten eggs, and the final one with the breadcrumb mixture. Dip each mushroom in the flour, shaking off the excess, then coat it in the beaten egg, and finally press it into the breadcrumb mixture until fully coated.

        Bake the Burgers: Place the coated mushrooms on a baking sheet lined with parchment paper. Lightly brush the tops with olive oil. Bake in the preheated oven for about 20-25 minutes, or until the crust is golden brown and crispy.

          Prepare the Buns: While the mushrooms are baking, lightly toast the burger buns on a skillet or grill until golden.
